Banofee Pie Recipe

What is a banofee pie? A banofee pie is a mixture of chocolate, banana and dark toffee. Such a rich and decadent treat.
2 Tablespoons cocoa powder
1 teaspoon mixed spice
1/2 cup butter, melted
1 1/4 cup digestive biscuits, finely crushed
1/2 cup butter
1/4 cup granulated sugar
1/4 cup dark brown sugar
1 can condensed milk
1 Tablespoon molasses
1/2 cup dark chocolate melting wafers, melted
1 1/4 heavy cream
4 small bananas, sliced
Serves 6 - 8
Mix together cocoa powder, mixed spice, melted butter and crushed digestive biscuits until well incorporated. Press into the bottom and halfway up the side of an 8 inch pie pan. Chill in fridge.
In a medium sized pot place butter and both sugars. On low heat melt butter and dissolve sugar stirring the whole time. Add condensed milk and bring to a boil and medium heat. Remove from heat. Stir in molasses and melted chocolate until well incorporated.
Pour filling into prepared crust and chill for 1 1/2 hours, or until firm.
Whip cream to stiff peaks. Fold banana's into half of the whipped cream. Set aside the other half.
Spread whipped cream with banana's on top of chilled pie. Spread the rest of whipped cream on top. Drizzle caramel on top. Serve.
