Beef Skewers Recipe

This is a recipe for marinated beef skewers mixed in with your favorite vegetable medley.

Ingredients

Marinade
1 cup pineapple juice
1/2 cup packed brown sugar
2/3 cup apple cider vinegar
1/4 cup soy sauce
2/3 cup ketchup
2 teaspoons ground ginger
1 1/2 teaspoons honey
metal skewers
3 lbs round tip roast, cut into cubes
1 large red onion, cut into 1 inch pieces
1 green pepper, cut into 1 inch pieces
15 cherry tomatoes

Directions

Combine juice and next 6 ingredients, mix well.

Pour in large shallow dish.

Add meat, cover and marinate in refrigerator over night.

Drain meat, retaining marinade.

Bring marinade to a boil in a saucepan.

Add mushrooms, reduce heat and simmer, uncovered, for 10 minutes.

Drain, saving marinade.

Alternate meat, onions, green peppers and tomatoes as desired on skewers.

Grill over medium coals 10-15 minutes, basting frequently with marinade or BBQ sauce.
