Creamy Home Made Potato Soup Recipe

This home made potato soup is made with simple everyday ingredients. It smells delicious and is great on those days when you want something simple and comforting.


4 large potatoes, peeled and rinsed
1 large, diced onion
1 Tablespoon butter
4 celery sticks, diced
2 carrots, peeled and diced
4 cups chicken stock
1/2 teaspoon fresh thyme, chopped fine
1 teaspoon dill, chopped fine
1 Tablespoon parsley, chopped fine

2 Tablespoons all purpose flour
1 teaspoon salt
1 cup milk
salt and pepper to taste

1/2 cup all purpose flour
1 egg
1 teaspoon
1/4 cup milk


Cut potatoes into small bite sized pieces.

Heat a large soup pot to medium heat, melt butter and fry the onions, celery and carrots for 3-5 minutes.

Add in potatoes and chicken stock with enough water (if needed) to cover potatoes by one inch. Bring to a boil then reduce heat to simmer.

Stir in the freshly chopped dill, thyme and parsley.

Cook for 20 minutes or until potatoes are tender.

To cream the soup, in a small bowl, use a fork to mix 2 tablespoons of flour and salt with cold milk until no lumps are left. Stir milk mixture into the soup and bring to a boil to thicken soup. Season with salt and pepper to taste.

To make the dumplings, in a bowl combine the flour, egg, salt and 1/4 cup milk. Drop the dough mixture, a teaspoonful at a time into simmering soup. Do not stir until dumplings begin to float.

Optional: Serve with bacon bits and chopped green onions.
